Our summer cocktails are here! We have got some delicious seasonal creations on our menu here at Sub 13 – perfect for enjoying on our sunny terrace.

 

Pimm’s Cup

It wouldn’t be summer without Pimm’s, and we think we have a pretty special recipe, using Bulldog Gin to add an extra kick, alongside Fever-Tree Ginger Ale for extra flavour. And of course, we load it up with lots of fresh fruit, cucumber and mint. All served in an on-trend gin balloon.

The key to Pimm’s is plenty of fresh fruit garnish.

Ingredients:
25ml Pimm’s No. 1
25ml Bulldog Gin
125ml Fever-Tree Ginger Ale

Garnish:
Pomegranate seeds
Raspberries
Strawberries
Blackberries
Cucumber spirals
Orange slice
Mint

Method:
Combine all ingredients in a gin balloon with ice cubes.

 

Aperol Spritz

Everyone loves Prosecco, and what better way to enjoy it than a refreshing Aperol Spritz, the next of our summer cocktails. Aperol is an orange aperitif similar in taste to Campari but slightly sweeter. This Italian classic simply combines Prosecco with Aperol and a dash of soda water for extra fizz.

An Aperol Spritz is increasingly people’s go-to summer cocktail

Ingredients:
50ml Aperol
75ml Prosecco
25ml Soda

Garnish:
Orange slice

Method:
Combine all ingredients in a gin balloon with ice cubes.

 

Rock Rose Gin

Rock Rose Gin is one of the new addition to our gin collection this summer. It is produced in Scotland using some rather unique botanicals: rowan berries and sea buckthorn, along with locally-harvested rose root. Combined with juniper, blaeberries, cardamom, coriander seed and verbena the resulting gin is slightly floral on the nose with hints of rose petal. On the palate you can taste the berries as well as a warm spice and hints of citrus. All in all, Rock Rose is a delicious, well-balanced gin. For our gin collection we serve it with pink peppercorns, grapefruit slices, toasted rosemary and Fever-Tree Aromatic Tonic.

Scotland’s Rock Rose gin is a new addition to our summer cocktail collection.

Ingredients:

50ml Rock Rose Gin
125ml Fever Tree Aromatic Tonic

Garnish:
1 sprig rosemary, toasted
10 pink peppercorns
2 slices pink grapefruit

Method:
Combine all ingredients in a gin balloon with cubed ice.

So, there you have just three summery creations from the Sub 13 cocktail menu. Don’t forget our house cocktails are 2-for-1 till 10pm daily, whilst gin collection and bubbly cocktails are 2-for-1 all night. That means you can enjoy our summer cocktails 2-for-1.
