Inspiration: The Clover Club cocktail
We have taken our inspiration for this punch from a classic cocktail called a Clover Club.
A real old-school drink that pre-dates prohibition in the US it is named after a gentleman’s club that met at the Bellevue-Stratford Hotel in Philadelphia. Don’t let that put you off though! The cocktail is a delicious drink that combines gin, raspberry syrup, lemon juice and egg white, and appears in several contemporary cocktail guides.After prohibition, this drink along with others that use raw egg fell out of fashion. It is only in the cocktail renaissance of the 2000s that it has been rediscovered and found it way back onto cocktail menus.
Hendrick’s Gin
We use Hendrick‘s gin in our punch recipe. Hendrick’s gin is flavoured with rose petals as well as cucumber, giving a lovely floral aroma that perfectly complements the raspberry. It is also one of the more delicate gins. This means the finished gin punch is not overpowered with juniper or other more savoury botanicals.
Raspberry Shrub
This is a classic ingredient that many 19th Century bartenders would recognise. A shrub is a preparation to preserve fruit using sugar and acid, in practice, vinegar. As well as preserving the fruit the sweet and sour nature of a shrub gives a great depth and complexity to a cocktail. Here we use a raspberry shrub from our friends at the Bristol Syrup Company.

So here is our recipe for the punch, scaled down to a single serve40ml Hendrick’s Gin20ml freshly squeezed lemon juice20ml Bristol Syrup Raspberry Shrub40ml ProseccoShake first three ingredients, strain over ice cubes into a chilled gin glass and top with Prosecco.
