Here at Sub 13 the mojito has always been our most popular cocktail, but over the last year or so a new concoction has been threatening to steal the Cuban classic’s crown – the salaciously titled but delicious-tasting Porn Star Martini.

Created in 2002 by bartending legend Douglas Ankrah at the Townhouse Bar in Knightsbridge, but probably perfected in his own Soho bar, Lab. It is a great combination of passionfruit, vanilla and vodka, as well as the (in)famous shot of bubbles on the side.

Since then its popularity has grown massively, perhaps because the way it is served makes it so recognisable, or its funny name, and because it tastes great. It even received the royal seal of approval when, in 2011, the Duchess of Cambridge is rumoured to have enjoyed them at her hen party!

Originally, the cocktail was intended to be drunk as follows: first enjoy the passionfruit garnish, then take the shot of prosecco and finally sip the cocktail. But others advocate alternative sips of both whilst another school of thought suggests adding the process to the cocktail. However you choose to enjoy it though, we will show you how we make it at Sub 13:

Porn Star Martini

50ml home infused vanilla vodka (just one split vanilla pod in the bottle for around 72 hours)
25ml passionfruit mix (see below)
25ml fresh lime juice
10ml vanilla syrup
25ml Perrier-Jouët Grand Brut Champagne

Shake the first four ingredients and fine strain into a chilled martini glass. Garnish with half a passionfruit and serve with the Champagne in a glass on the side.

To make the passionfruit mix, we combine equal parts by volume of fresh passionfruit seeds, passionfruit purée (try Boiron) and passionfruit or sugar syrup. Mix in a large jug then force through sieve to remove the seeds.
