With the seasons changing we have just updated our cocktail menu here at Sub 13. With a whole host of brand new creations from our award-winning bar manager Clem Eastel we are sure that everyone will find something they like!
The new menu is split into the favourites section, which still retains our old favourites from the last eleven years — and is available 2-for-1 until 8pm daily. The rest of the menu is made up of a selection of fizzes. These are refreshing drinks served long over ice with the addition of something effervescent like soda or ginger beer. One of my favourites is the Cool Runnings:
50ml Plantation Jamaica 2001 rum
25ml Pineapple Shrub
25ml Lime Juice
1 dash Angostura Bitters
1 tsp sugar syrup
Top with soda
Method: Shake first five ingredients and strain into a tall glass filled with crushed ice, top with soda and more crushed ice. Garnish with a pineapple leaf.
Pineapple shrub is a wonderful cocktail mixer made by infusing a diced, fresh pineapple with 200g white sugar, 100ml sauvignon blanc vinegar and 50ml Havana Club 3 year old rum. After 48 hours the pineapple is separated and the remaining liquid squeezed the from it. It was traditionally a way of preserving fruit that retains its balance without being too sweet or too sour.
The third section of the menu is devoted to fancy drinks, these are cocktails that are generally served in stemmed glasses without ice and are much more delicate, such as a classic martini or one of our new additions the Tiramisu, an indulgent mixture of chocolate liqueur, coffee liqueur, fresh espresso, milk and cream — perfect if you skipped pudding!
